- 25ml Mermaid Gin
- 25ml Cherry Liqueur
- 25ml Benedictine
- 50ml Pineapple juice
- 25ml Lime juice
- Angostura Bitters
- Top up with soda water

Method
Mix Mermaid, Cherry Liqueur, Benedictine and Bitters with ice until the glass cools. Pour into a tall glass, then top up with pineapple, lime and soda.
